《食品科學與工程導論》是國際食品科技聯(lián)盟（IUFoST）前主席（20082010年）Geoffrey Campbell-Platt教授主編，來自10個國家，15所擁有*的食品科學技術專業(yè)大學的30名教授或高級講師編寫，Wiley-Blackwell出版社出版的大學教科書。
本書由天津科技大學食品科學與工程教學團隊翻譯，根據我國食品科學與工程教學情況將本書命名為《食品科學與工程導論》（Food Science and Technology）。本書共21章，涵蓋了食品科學與技術教學的核心內容，包括化學、物理學、數學和統(tǒng)計學、生物化學、微生物學、生物技術、食品加工工程、食品工業(yè)工程、食品分析、食品感官評價、食品安全相關的管理毒理學、質量保證與食品法規(guī)、食品企業(yè)管理、市場營銷、產品開發(fā)、信息技術和學習與轉化技能等。
本書適用于我國食品科學與工程、食品質量與安全等本科專業(yè)的教學，也適合非食品專業(yè)背景的研究生和食品從業(yè)人員的轉型學習和終身學習。本書特別為非食品專業(yè)背景的博士畢業(yè)生提供了與食品科學與技術相融合的交流機會。

This book Food Science and Technology is being widely used around the world, as the key textbook for University courses, leading to Degrees in the subject.
It is produced by The International Union of Food Science and Technology, IUFoST, the professional organisation representing some 250,000 Food Scientists, Food Engineers and Technologists in some 70 countries globally. China is a key member, through its Chinese Institute of Food Science and Technology, CIFST, which together with IUFoST hosted the 14th World Congress of Food Science and Technology, in Shanghai in 2008, and delivers the International Food Safety Forums, held in April in each of the past five years in Beijing.
For the successful future of the increasing world populations, IUFoST has set the mission of Strengthening Global Food Science for Humanity. It is helping deliver on its objectives of Food Safety and Food Security through Education.
